Ingredients (make about 4-5 servings) 1 large stick of lemongrass (white part only, chopped) 5 cloves of garlic 1.5” piece of galangal (sliced) 2 red chillies (more if you want it hot) Small bunch of coriander 1 Tbsp oil 2 Tbsp fish sauce 1 Tbsp soy sauce 1/2 tsp roasted belacan (optional) 2 Tbsp brown sugar/palm sugar .
